Should Be Included in the Universal Monsters Universe
A list of Universal Monster properties that should be included in the new cinematic universe proposed by Roberto Orci & Alex Kurtzman. Mummy, Dracula, Frankenstein, etc... are all obvious choices for this cinematic universe project; but personally, I'd love to see any of the smaller, lesser known properties thrown into the mix as well.

Dr. Jekyll and Mr. Hyde
Here's a story that's pretty well known, because it's been adapted several times in the past. Heck, even Looney Toons used it on multiple occasions.

To modernize it a little, what if the split personality isn't caused by a potion; but instead is something Dr. Jekyll is born with, and the potions he takes are his failed attempts to "cure" himself of his afflictions. Could be one of those bizarre cases where there's two souls inhabiting the same body. Maybe Jekyll's mother was pregnant with twins, but only one of them survived; or so they thought until the 2nd & violent personality made it's appearance during childhood.

I could easily see him being introduced in another movie as an eccentric doctor and lead into his own feature.

The Leech Woman
There aren't a lot of women on the list of "monsters", but this is one of the more interesting choices. I imagine a story about a woman who centuries ago nearly died after being raped, beaten and left for dead, until she made a "deal with the devil" in order to survive; but cursed with eternal life for which she must drain the lives of others in order to remain young and mobile.

I could see her becoming an anti-heroine of sorts. A spirit of vengeance for women who are victimized by men. She only drains life when she has to and only from those she deems bad. The antagonist could be a present-day girl who learns of her secret and wants the same deal out of vanity and greed, who's willing to kill innocent people until she gets what she wants.

Creature from the Black Lagoon
Since the Creature really hasn't had a movie since the 50's unlike Dracula and The Mummy; this could easily be a re-envisioned remake of the original using today's technology and  involving a group of geologists exploring an area in the Amazon that has had little to no previously recorded expeditions and end up coming across a new, but old, humanoid species that attacks and kills them.

The Invisible Man
This could definitely fit into the tone that'll most likely be set by The Mummy in 2016.

Introduce the Invisible Man into the world of corporate espionage in which the protagonist is a theoretical physicist working for a company that manufactures high-grade military items. When soldiers die and the company becomes liable, that company directs blame to the physicist and his invisibility formula. To prove his innocence and that it wasn't his formula that killed those men, he begins taking the formula himself and committing minor crimes; that is until the side-effects kick in and he becomes aggressive enough to kill.

Frankenstein
Another one that would be an obvious pick for a Universal Monster universe, but just like Dracula; there's have been numerous variations of the character. So again, I'll leave it to them.

The Mummy
Slated to be the 1st.

Sounds like it'll be an action/adventure set in present day with horror elements, I guess similar to the 1999 remake w/ Brendan Fraser; except this will feature a new storyline and characters rather than rehash what we've already seen.

The Man Who Laughs
A tragic story about an a kind and gentle young man who was abducted and horrifically mutilated as a child; and despite his good nature is treated like a clown or monster because of the facial disfigurement.

I would love to see how this would be re-envisioned and remade to fit into a universe set in present-day.

Dracula
Dracula is an obvious choice, but there have been so many movies and versions of the character including the one coming out in theaters pretty soon; it's difficult to think of a way to use him that would feel new and refreshing. So I'll leave it for the professionals to figure out.

The Phantom of the Opera
I'm thinking with The Mummy, we're already introduced to the supernatural and things like curses; so maybe at some point during the early years of the Phantom's life, he becomes the victim of a curse. Either placed on him by the Gypsies he grew up with because he's a popular attraction at their carnivals, or ordered by the Shah of Persia as punishment; and is forced to live out his life in solitude for over a century in an old abandoned palace. That is until someone decides to buy and renovate it; and in the process meets the woman, in present day, who could finally lift the curse allowing him to die.

The Wolf Man
Obvious choice, but he's a werewolf. Werewolves are just as common as vampires and zombies, so I'm not that excited for him. Though I imagine he'd be one of the 1st ones up for consideration.
